Call me weird but with food, I am one of those people who won't try something new until someone else asks me to. Its happened with beetroot, olives and now butternut squash. While staying over at my boyfriend's parents, his mum made a very lovely butternut sqaush soup which meant trying it for the first time and I made sure before I left I got the recipe from her. Being extremely busy during the week, its great making this on the weekend and having a huge batch to eat during lunch over the week.
